The Iron Pig Food Truck
The Iron Pig has been in business since 2021. After many years of studying, doing trials and testing, crafting my product until I was satisfied, before The Iron Pig Food Truck came to life. As a BBQ Pitmaster for over 25 years there have been many late nights and early mornings working on my craft. I have developed my own spice rubs and sauces. I have rubs for both pork and beef and one for chicken. I have developed 17 different sauces with most of them for BBQ wings. There is one sauce that was developed to “marry” with my spice rub, that being Apple Jack. Instead of ketchup as the base, which is common in many sauces, this sauce base is Applesauce, with a hint of cinnamon. Apple Jack name came about as it includes a 5th of Jack Daniels in the recipe that makes 4 gallons.

The Iron Pig 2.0
The Iron Pig 2.0 is a restaurant/commissary kitchen supporting my food trucks. The Iron Pig 2.0 came about when a bar and grill didn’t want to run their kitchen anymore. They reached out to the food truck community to find a food truck to take over their kitchen. By doing this they would get a company that is not the usual restaurant flair but something unique to a bar environment. This also helped the food truck as a commissary kitchen is a requirement by the health department. Bringing the 2 together helps both companies. The bar also has a ballroom that when rented has the option to hire the restaurant as a caterer. The is no outside vendor rule, but if the restaurant agrees to outside food that comes with a $125 outside vendor fee.
Das Deutsche Imbisswagen (The German Food Truck)
Das Deutsche Imbisswagen is a food trailer that came to life with some research and working with a German beer hall at a couple of events. The “lightbulb” went on when I realized that we have 4 German restaurants and no mobile German food in Southeastern Wisconsin. We will be serving German food that is found in Germany and the German restaurants throughout the US. Das Deutsche Imbisswagen does roadside, catering and events. Future expansion will include The Iron Piglet/Das Eiserne Ferkel. This will be a small setup that will work out of a tent and can serve food matching either The Iron Pig Food Truck or Das Deutsche Imbisswagen.
